Protein Pancakes

 ChefJoyardee is back with Protein Pancakes. This is a recipe that I have been making for over 20+ years, since my days when I used to compete in Figure/Bikini Competitions.  What do you need?   a skillet a spatula (you know, to flip the pancakes) 1/2 cup of oats 6 egg whites/1 whole egg 1 scoop of protein powder (chocolate or vanilla) a dash of cinnamon Natural peanut butter (optional) Time commitment Prep time: about 5 minutes if you are good at separating eggs Cooking time: about 4-5 minutes each pancake Start off by dumping the protein powder (I like chocolate) into a bowl. From there, add the oats and cinnamon and mix before you add the egg whites and egg. Mix until all ingredients are well blended.  Now heat up the skillet over medium heat and use a neutral oil if you do not have a non stick pan.  Welcome to chefjoyardee and tinykitchencreations. My name is Joy and the purpose of this blog is to show you that you can make simple and quick meals just using one pan. I currently live in a 340 sq. ft. studio apartment in the Edgewater neighborhood of Chicago. Since space is very limited, I have to be creative. Did I also say that I am in the Fitness industry? I'm no where near a trained chef but I love to eat and I love to cook. I hope this blog starts to open your mind of the possibilities of what you can do in the kitchen. For today's meal, I only used 3 ingredients. This meal can be considered vegan or you can add some meat to this if you so choose. Time commitment Prep: 5 minutes Cooking time: 10ish minutes Ingredients: 3 handfuls of baby broccoli roughly chopped 5 -10 medium white mushrooms sliced 1 can of black eyed peas (or any legume) drained and rinsed Heat up about a tablespoon or 2 of oil in a pan.
